A filling lunch for under 300 calories!
Spicy Chicken Street Style Tacos
1/4 tsp ground red pepper
1/2 tsp red chili powder
1/8 tsp paprika
3 ounces skinless chicken breast, cubed
2 medium white corn tortillas
2 Tablespoons green onions, or white onions (chopped)
2 Tablespoons cilantro (chopped)
1 Tablespoon lime juice
Place chicken into a plastic zip bag with spices, shake to coat evenly. This can also be done in a bowl. Place two tortillas onto a large plate, top with chicken and lime juice evenly divided. Heat in the microwave for 45 seconds to a minute. Top with onion, cilantro, and more lime juice if desired.
The greatest thing about this dish is how easily it can be changed. My mom adds rice to hers, sometimes I add a yummy green salsa. Keep in mind that all changes add or subtract calories.
For this lunch I added in a small Gala apple, and here are the nutritional totals for the entire meal:
299 calories, 49 grams of carbs, only 3 grams of fat, and 23 grams of protein.
Totally worth every bite! And it tastes like my favorite fast food, spicy chicken tacos from Betos.
